A professional champagne turner can turn 100,000 bottles in a day!

Here's an interesting tidbit I bet you didn't know about me:

I lived in and documented an ancient cathedral that had been turned into a winery after being bombed in the War and eventually restored by a baroness into an abbey winery.

In France I learned to love table wine, trade herbs for pears, and throw together any good foods plus  butter and herbs and wine to make even better food... 

And I learned to love architecture and design.

And to make it real

And pass down for generations

To me that's just sustainable.

There's a cool doc on @netflix about #Champagne that got me inspired to tell this story.
